Method
Soak
Soak the wheat, chickpeas and beans in separate bowls of water overnight.
Boil the pulses
Boil the chickpeas and beans separately until soft, then drain.
Cook the wheat
Cook the wheat in 10 glasses of water over a low heat until the grains open and the liquid thickens.
Combine
Add the chickpeas, beans, dried fruit and sugar. Simmer for another 20 minutes, stirring from time to time. Add the orange zest.
Chill and decorate
Divide among bowls and chill. Decorate with walnuts, hazelnuts and pomegranate seeds.
Tips
- Add the sugar after the wheat has softened, otherwise the grains will not open.
- It thickens as it cools, so the liquid should look a little generous.
Storage
Keeps for 5 days in the fridge.
