Method
Knead the meatballs
Soak the bread crumb and squeeze it out. Knead with the mince, onion, egg and spices for 3 to 4 minutes. Chill in the fridge for 20 minutes.
Shape and brown
Shape into long finger-shaped meatballs. Quickly turn them in a hot pan until their outsides take colour.
Prepare the potatoes
Cut the potatoes into wedges and fry in the same pan, or oil them and bake until half cooked.
Arrange in the tray
Arrange the meatballs and potatoes in turn in a baking dish. Tuck in slices of tomato and whole peppers between them.
Add the sauce and bake
Dissolve the tomato paste in the hot water with the salt and pour it over the tray. Bake at 190 degrees until the potatoes are tender.
Tips
- Browning the meatballs first stops them breaking up in the oven.
- If the sauce reduces too much, add hot water, as cold water makes potatoes firm.
Storage
Keeps in the fridge for 3 days. Reheat in the oven, covered.
